Seasons Greetings


Let the festivities begin! If you're stuck for Christmas and New Year's serves check out my list of exciting cocktails ready to get the party started.

Here's a few of my favorite concoctions. Created by myself and shot by Dorset Food & Drink Photographer Richard Budd.  




 The Amalfi Sorbet Royale
Italicus Rosolio de Bergamot is a delicate Italian liqueur with a unique flavour profile somewhere between a dry vermouth and a bitter. It also boasts amazing natural sweetness that allows it to be a stand out ingredient or an effective modifier.


Italicus 30ml
Real Ginger 10ml
Belaire Gold 50ml
Thomas Henry Tonic 40ml
Finest Call single pressed Lemon 10ml
1 quinelle of Lemon Sorbet
Build and stir
Place Mint sprig Sorbet and ginger slices on top. Serve in a balloon glass.

This cocktail is great as an amuse bouche/ aperitif beverage. Serve at your New Years Eve party with seafood based canapes.



Latvian Cherry Sour

40ml Riga Black Balsam Blackcurrant
20ml Re'al B lack Cherry Infused Syrup
 90ml Finest Call Sweet and Sour,
7ml Ms. Betters Miraculous Foamer

This classic looking cocktail brings elegance to any party! Using the bitterness of Riga Black Balsam i am able to create a digestive cocktail that's quick and easy to make. Finest Call Sweet and Sour brings a combination of citrus flavours to the cocktail that pairs perfectly with the sweetness of Re'al Black Cherry Infused Syrup.



Chocolate and Coconut Old Fashioned

Pusser's Admiralty Rum 50ml
Stolichnaya Coconut and Chocolate Vodka 20ml
Dehydrated Orange Wheel
2 Dashes of Chocolate Bitters

Who doesn't love a twist on an classic old fashioned? The great thing about this cocktail is that it contains no added refined sugars. The sweetness from the rum and flavoured vodka delivers a complex taste profile that brings natural sweetness to the fore front. Great served at the end of a large meal as a refresher.


Rooster Christmas Punch

40ml Rooster Rojo Blanco
60ml Pineapple Juice
20ml Re'al Mango Infused Syrup
15ml Finest Call Single Pressed Lime Juice
Nutmeg and pineapple garnish

Who doesn't love a little tequila at Christmas? Rooster Rojo brings the best from Mexico to your lips in this fresh and exciting punch. The mineral-agave notes in the tequila are balanced with Re'al Mango infused Syrup. With ripe Alphonso mango's from India and 100% cane sugar. Shake it all up to create a fantastically fresh cocktail that's party ready.
