Apricot Paloma


Now i'm a massive fan of  tequila in all forms, and last year saw a real push in brands creating really interesting flavours to wow the ever madding crowds. One of my favourites has to be Cascabel Honey, an incredibly rich and fragrant honey tequila. It not only boasts an intense original flavour but still packs a good ABV.

Top tip... keep it in the fridge. Its an awesome shooter and i've no doubt it could one day rival the classic tequila shot.

My Apricot Paloma is a take on the Mexican Original, blending grapefruit, zingy lime and tequila in a silky shaken mix; and as an ode to trends of late 2014 i've thrown in a mix of Briotette creme d'Apricot and a splash of rose wine. You could swap out the apricot for the Cascabel Honey, changes the game completely into a hearty, wholesome and slightly sweet drink. Try it both ways.

A real spring time sun-downer.

80ml Fresh Pink Grapefruit Juice
25ml Sauza Silver Tequila (or Cascabel Honey)
15ml Lime Juice
15ml Gomme
25ml Briotette Creme D'Apricot
20ml Zinfandel Rose

Shake it all up, serve in a sling glass and top with the Rose. You can even give it a cheeky salt rim to compliment the tequila and the grapefruit. I love grapefruit juice as it's actually really versatile. The bar i run now has a real student base, they instinctively go for sweet and alcoholic, but i enjoy discussing the way all of the components in this cocktail take away the intense bitterness of the grapefruit, and make it rounded.
